Re-set your Autumn food repertoire

WITH THE change in season our bodies crave more “comforting” foods to stave off hunger and keep us feeling satisfied so it’s important to find some tasty, filling and healthy recipes to stop us snacking on highly calorific foods.

Now is a great time to look for seasonal fruits and vegetables which tend to be not only tasty and filling but also kind to the family budget.

Some of the ones to look out for are butternut squash or pumpin (great for warming soups), cabbages, pears, plums and damsons.

Whether you are trying to lose weight or to just eat a healthy balanced diet it’s important to plan meals that all the family can enjoy.

Here is a particular favourite in our house – it makes a great Saturday brunch and then we wrap up and go for a brisk walk together to burn off a few calories.

SPICY BUBBLE & SQUEAK (serves four – prepared and cooked in 20 mins)

Peel and cut 500grms of potatoes into small chunks, add to a saucepan, cover with boiling water and simmer for 6-8 mins until tender.

Meanwhile peel and thinly slice 1 large red onion, spray a frying pan with calorie controlled spray, add onion and cook for 3-4 mins until softened.

While it’s cooking shred 300grms Savoy or green cabbage, add to pan and stir-fry for 3-4 mins until the cabbage is wilted. Drain the potatoes in a colander letting them steam dry for 1-2 mins.

Meanwhile, thinly dice 1 green chilli & then add this, 1 tsp cumin seeds, the potatoes, 250grms of lean roast ham snipped into pieces and a small handful of coriander to the frying pan.

Spray a couple of times again with the calorie controlled spray and stir fry everything for 3-4 mins. Check the seasoning then serve with a few extra sprigs of coriander. (4 Pro Points Value per serving)

For a more heartier meal top each plate with a poached egg for an extra 2 Pro Points per serving.
