WITH EVERYONE settling back into their normal routines after the holidays and moving into their autumn clothes I’m reminded that although jeans are a wardrobe staple they can be among the least forgiving item – especially if we’ve over indulged over the summer.
However, they can be a great motivator to press the re-set button on a healthier diet and more active lifestyle.
Start to plan your meals so you don’t get stuck for ideas which can lead to takeaways or convenience foods with high calorific values.
Think about which days you have time to cook, which days you’ll have to be more flexible and then re-stock your fridges and cupboards with healthy options.
With a little planning you can create some really family-friendly, inexpensive but tasty dishes like the Weight Watchers Chicken Stew with Rice below.
And as the nights draw in don’t fall into the trap of becoming more sedentary – start to think of how you can become more active doing something you enjoy.
Chicken Stew with Rice – serves 4 (12 PP value and £2.08 per serve)
- Brown 8 skinless chicken drumsticks in a lidded saucepan with spray on a high heat, then remove.
- Reduce heat to medium and add a large chopped onion to pan, cook for 5-7 mins until softened and starting to brown.
- Add 2 finely chopped garlic cloves, 2 tsps smoked paprika, 400grm tin cannellini beans, 400grm tin cherry tomatoes and 150mls water.
- Return the chicken to pan, bring to ther boil, reduce heat and simmer for 30mins. Add 100grms baby spinach and stir.
- Meanwhile cook 300grms brown rice.
- Serve stew over the rice, garnished with chopped parsley
