THERE WAS much publicity last year regarding the cost that obesity is having on our health service and I am sure all of us are more conscious than ever about losing weight, eating more healthily and doing more exercise.
Losing just five per cent of your present weight would see some health benefits and ten per cent would see less chance of developing type 2 diabetes and many heart diseases.
There is no rocket science in losing weight – it’s all about creating a calorie deficit. At Weight Watchers we use a simple counting system but whatever method you choose and whatever your preferences (vegetarian, high or low carb or gluten free) you can still create that calorie deficit.
Out with the old and in with the new, get rid of all those highly calorific leftovers and stock your cupboards with healthy and fillings like beans and pulses.
Fill your fridges with lots of seasonal fruit and vegetables and lean proteins and make a commitment to be more active as this will have many benefits.
Below is a quick and easy warming soup for you to try. Here’s to a happy and healthy 2015.
CARROT, TARRAGON & YOGHURT SOUP (serves 2 – 1PP value per serve)
- Put 250g of scrubbed and chopped carrots into a pan with 600 mls of vegetable stock, half a medium chopped onion, 2 sprigs of tarragon and season.
- Bring to the boil, then simmer for 15 mins until the vegetables are soft. Strain the stock into a jug & reserve.
- Puree the vegetables in a liquidiser. Return pureed vegetables and stock to the pan, add 2tsp of lemon juice and stir until well mixed.
- Strip the leaves from 2 more tarragon sprigs and stir into pot.
- Serve with 1 tbsp of 0% Greek Natural Yogurt spooned into each bowl.
