AT THIS time of year you will find lots of seasonal fruit and vegetables in the shops which are home grown.
Strawberries, peaches, apricots, tomatoes, cucumbers, lettuce, beans, potatoes to name a few – the list is endless.
Take advantage of these right now because they look and taste great, they tend to be cheaper because there a no transportation costs, they are full of vitamins, fibre and nutrients and they will fill you up and keep you feeling satisfied.
Don’t just think of fruit as a dessert or something to snack on between meals – try experimenting by adding it to salads.
Grapes, satsumas, apples and strawberries all give a fresh taste to salads.
Chopped watermelon, fresh mint leaves tossed with reduced fat feta cheese is one of my particular favourite side salads.
Try baking peaches or apricots in the oven and serve as an accompaniment to pork chops or gammon.
Finely chop a mango, two spring onions, a small bunch of coriander, half a medium hot red chilli and mix with the juice of half a lime to make a delicious salsa (goes great with Thai fishcakes).
Fennel is a lovely crunchy addition to a salad and try experimenting by adding fresh beans, peas and even grated courgettes in with your pasta dishes. This is a great way of getting your seven a day.
So what are you waiting for? Get out there and “eat a rainbow”. A sure way to enjoy tasty, appetising and nutritious meals.
