The Three Crowns: Successful times and new staff

ANTHONY BYROM, executive head chef at the Three Crowns Restaurant and Inn at Scouthead, reflects on a year in his role and looks ahead to a refurbishment.

AS WE enter our second month since the makeover at the pub, to say business has increased would be a slight understatement – private parties, charity dinners, themed events and even the number of weddings has increased.

The amount of new customers coming through the doors has been revitalising and to see them returning for more of what’s on offer is testament to our philosophy that we provide a memorable, enjoyable and affordable service to both new guests and of course to our loyal customer base that have frequented the Three Crowns for many years and have seen its identity change over the past 12 months.

The new décor adds to the relaxed ambiance and sits well with my style of food, nothing too pretentious, over complicated or unnecessary. ‘What you see is what you get’.

I was saddened to part company last month with a strong member of my brigade who, after a year with me, has been given the opportunity to run his own kitchen – which I guess is testament to some guidance hopefully that he has gained from all the shouting from me!

I wish Danny all the very best for his future at the Dysarts in Mossley and look forward to trying his food in the near future.

So, after a brief recruitment drive I was delighted with the response. It has re-established my faith in the number of passionate people out there in the local area who are ambitious and really want to work hard in a professional kitchen.

I have found a strong sous chef who has 16 years under his apron to work alongside me, as well as taking on two more junior chefs which, with their enthusiasm, is only going to strengthen the brigade and enable us to take the food at the Three Crowns to the next level.
