WITH THREE Bank Holidays and a half term holiday in the last two months, June is a time to review your strategy for a healthy summer – and with the World Cup looming, footie fans can look forward to a whole month of sofa-surfing.

Recently there’s been a lot of talk in the press about the nation’s obesity. An estimated 66 per cent of men in England are overweight or obese which boosts their chance of developing heart disease, type 2 diabetes and prostate cancer.
But losing just 5% of your body weight can reduce these risks so regular exercise and watching your food intake can help you achieve this.
Think outside the box, serve up the right food and you’ll stay onside whether England win or not.
Whether you love football or not it makes sense to work on your drink strategy for the summer months. Taking the soft option like a “mocktail” can not only help you lose pounds but help you stay hydrated which is vital for good health as it helps digestion.
We’re going for goal in my meetings and we’ll certainly be part of the winning team so why not join us by kicking out those unhealthy TV snacks during the game and try these Brazilian Empanadas.
Brazilian Empanadas (2 PP each)
- Mix together 125g lighter soft cheese, 25g half fat mature cheddar, 2 finely chopped spring onions, 25g fresh breadcrumbs & 1 beaten egg.
- Cut 1 18g sheet filo pastry into quarters, put 2 quarters on top of each other making 2 stacks, putting a spoonful of the mix in middle of each.
- Brush edges with cold water then fold corner diagonally seal to make a triangular shape.
- Repeat with 5 more sheets, place on baking tray, brush with oil & bake in oven 10-12 mins gas mark 6/200 c/180 fan & serve hot with homemade tomato salsa.
