EASTER TENDS to be a long Bank Holiday weekend focusing on lots of social time, family and food indulgence on a grand scale.

This time it also saw the clocks go forward so it’s a great time to review your lifestyle.

Start by getting your body and mind in the mood for healthy living by a spring wardrobe clearout.

Make use of that extra hour of daylight by becoming more active, perhaps spending more time outdoors than indoors.

Tackle your kitchen cupboards and stock up on seasonal items. Celeriac is one of my particular favourites. It’s a bit knobbly and odd shaped but it’s so versatile: you can mash it, chuck it in slow cooked suppers or slice it thin and add a dollop of mustard mayo for a great accompaniment to fish dishes (and for us weight watchers it has a zero Smart Points allowance).

It takes just five minutes to prepare and another five minutes to cook – ready before you can even dial the takeaway number! Eating healthily makes life better.

Margherita Tortilla Pizza (serves 1 – 6 Smart Points per serve)

  • Preheat the oven to gas mark 6 200C/180fan.
  • Place a soft flour tortilla on a baking sheet and spread 6 tbsp of passata over it. Scatter 40grms diced light mozzarella and season with salt and freshly ground black pepper.
  • Cook in the oven for 5 mins until the cheese is bubbling then serve topped with rocket.
  • You can also add any other vegetables to the topping for no extra points.
